Simply Just Soyrizo & Potato Tacos (vegan & gluten-free)

There is nothing that I love more than tacos!!! Jackfruit tacos, potato tacos, habiscus flower tacos, bean tacos, tofu tacos...and the holy soyrizo & potato taco. These amazing vegan taco options can go on forever but yes the holy soyrizo & potato taco is simply just divine, more satisfying than your average potato taco and bursting with more flavor than the blando jane tofu taco.

Put your salsa away because this soyrizo & potato taco does not need anymore side kicks to help it taste amazing. This taco is a one man show. Recipe is posted below and it is easy as 1, 2, 3....!

makes approx 10 tacos
2 medium sized russet potatoes (peeled & cubbed)
1/4 cup chopped white onion
1/4 cup chopped tomato
1 teaspoon black pepper
1 teaspoon salt

1/4-1/2 cup soyrizo

10 medium sized corn tortilla

Preheat a medium saute pan. Add 3 tablespoons of oil, stir in the potato, onion, tomato, salt & pepper.

Allow the veggies to cook 15-20 minutes until potatoes are tender. Stir every 5 minutes.

When potatoes are tender, turn the heat on high to give them a nice crust. Stir in the soyrizo & your fill is done.

Now to assemble the taco. Warm up your tortillas on a hot pan to make them soft & fold-able.

Spoon about 2-3 tablespoons of soyrizo potato filling in the tortilla, fold it in half.

You can grill the tacos or fry them either way they are simply just amazing!
