On the other note, this week has been an adventure of bake-a-thons and lots of recipe-brainstorming. Yes I know I just made up a few new words just now. I just can't help myself.
So here is to Fall. A new beginning. A good year. And a new recipe!
~makes 12 bars
2/3 cups pumpkin puree (not pumpkin pie mix)
1/3 cup agave nectar
1 teaspoon vanilla extract
1 1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon Chinese five spice
1/4 teaspoon salt
2 cups gluten-free oats
1/3 cup pumpkin seeds
1/3 cup gogi berries
Pre-heat oven to 325F
In a large bowl stir together the pumpkin puree, agave, vanilla, cinnamon, ginger, nutmeg, Chinese five spice & salt.
Then slow fold in the oats, pumpkin seeds and gogi berries. Line a baking dish with parchment paper & bake for 15-20 minutes.
Allow the granola to cool before dividing into bars.
