Chewy Pumpkin Spice Granola Bar (vegan, gluten-free, agave-sweetened)

What says Fall weather than pumpkin? Exactly... pumpkin says Fall is officially here! When all the coffee shops on the corners advertises 'their' pumpkin spice latte on the windows. And you can't help but want to step in and deeply inhale the Fall spice into your barely recovering Summer lungs. This is when you know Fall is here.

On the other note, this week has been an adventure of bake-a-thons and lots of recipe-brainstorming. Yes I know I just made up a few new words just now. I just can't help myself. 

So here is to Fall. A new beginning. A good year. And a new recipe! 


~makes 12 bars
2/3 cups pumpkin puree (not pumpkin pie mix)
1/3 cup agave nectar
1 teaspoon vanilla extract
1 1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon Chinese five spice
1/4 teaspoon salt

2 cups gluten-free oats
1/3 cup pumpkin seeds
1/3 cup gogi berries

Pre-heat oven to 325F

In a large bowl stir together the pumpkin puree, agave, vanilla, cinnamon, ginger, nutmeg, Chinese five spice & salt.

Then slow fold in the oats, pumpkin seeds and gogi berries. Line a baking dish with parchment paper & bake for 15-20 minutes.

Allow the granola to cool before dividing into bars.
