Easy Gluten-Free Vegan Pizza Crust

Pizza is by far one of my favorite foods. As a kid my mom use to take me to the mall and for lunch we would eat pizza! I know the mall does not sound like a place for good pizza but it surely was not a Sbarros (ew). This place had the best thin crust and the sauce had amazing flavor & viscosity. At that time my favorite pizza was plain o' cheese. I would just fold the pizza in have and bite into the savory goodness. The combination of thin crunchy crust with the tomato sauce was simply divine.

I think the crust & the sauce can really make or break a pizza. Recently I have been taste testing quite a few gluten-free pizza crusts. Many of those had a weird after taste or an unpleasing texture. So I came up is a fool proof super easy gluten-free vegan pizza crust. It does not need too many different ingredients, though it taste great. This one has a crunchy crust that will make your pizza into a super star, I think the real underdog is the olive oil which give the dough a little something extra.

*notes on the gluten-free pizza dough: this pizza dough may feel too wet and look like a ball of goop, but that's okay. Proceed with the flouring of the surface and rolling out the pizza dough.


Ingredients
1/2 cup warm water
1 teaspoon active dry yeast
1 Tablespoon sugar
1/8 cup olive oil

3/4 cup buckwheat flour
1/2 cup all-purpose gluten-free flour
1 teaspoon xanthan gum
1 teaspoon salt

~serves 1 medium pizza

Direction
In a large bowl  stir together the warm water, yeast and sugar. Allow the mixture to sit 5-10 minutes to reactivate the dry yeast. You know its ready when the yeast is bubbly.

Stir in the salt and xanthan gum.

Slowly stir in the buckwheat and all purpose gluten-free flour. When everything is completely incorporate. Cover the pizza dough with plastic wrap, set it in a warm place and let the dough rise for 30 minutes

When the dough is done rising. Punch down the dough to get rid of the air pockets and allow it to rise once more for another 30 minutes.

After the the pizza dough is done rising, roll out the dough into desire pizza crust size top it with your favorite toppings, I like to use home made vegan cheese .
