Coconut Shortening Frosting

I am a huge fan of frosting, but I really dislike using veggie margarine or spread. There are just too many ingredients going on. I like to keep things simple. Some people may use coconut oil to make shortening but I used coconut shortening in this version. Feel free to substitute powdered sugar with agave or stevia. 

5 oz coconut shortening (I used Spectrum)
3 Tablespoons vanilla extract
1 Tablespoon fresh lemon juice
3 Tablespoons coconut milk (the one from the cans)
11/4 cup powdered sugar

whisk all the ingredients together until emulsified.

Store in cool dry area after using.
