1/2 cup soy milk + 1/2 teaspoon vinegar
1/4 cup canola oil
1/8 cup agave
3/4 teaspoon vanilla extract
1 1/2 cup all purpose flour (or substitute with a GF flour)
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup mashed of bananas (about 2 medium bananas)
First pre-heat your oven to 350 F
In a large bowl add in your soy milk and vinegar. Allow it set for about 5 minutes until the soy milk curdles, then mix in the canola oil, agave and vanilla extract.
Now sift in your dry ingredients into the bowl. Stir together with a spatula and lastly fold in your mashed bananas.
Pour your banana bread mixture into a lined and oil loaf pan and bake for 30-35 minutes.
Let the banana bread cool for 15 minutes before serving.
