Vegan Gluten-Free Chocolate Chip Cookie or Oatmeal Raisin Cookie

Chocolate Chip (Vegan & Gluten-Free)

Oatmeal Raisin Cookie (Vegan & Gluten-Free)



Ingredients

drys
1 cup gluten-free oat flour
1 cup almond meal
1/2 tsp baking soda
1/2 tsp kosher salt
1/2 cup dark chocolate chips **


wets
1 flax egg: (1 tbsp ground flax mixed with 3 Tbsp hot water) 
1/3 cup melted coconut oil 
1 tsp vanilla extract
1/2 cup packed organic brown sugar
1/4 cup organic cane sugar


**To make oatmeal raisin cookies substitute the chocolate chips with
1/3 cup gluten-free rolled oats, 1/4 cup raisins, and 1/4 teaspoon of cinnamon

Pre-heat your oven at 350 F

First mix all your dry ingredients together in a bowl and set it aside.

Now make your flax egg by combining the flax meal with the hot water, whisk until it gets really slimy and gooey. Then stir in the melted coconut oil, vanilla extract, organic brown sugar, and organic cane sugar. Mix until all the ingredients becomes paste like. Then slowly stir in the dry ingredients until all the flour has soaked up the wets.

Using a tablespoon scoop, just scoop the dough and drop it on to a lined sheet pan. You do not have to press the dough down, it will spread as it bakes, unless you want a flatter crisper cookie.

Bake for 10-12 minutes.

The cookie may seem soft when you first take it out of the oven. But like all coconut oil base cookies, the coconut oil will solidify and the cookie will be nice and crisp in 1/2 an hour.
