Fat-Free & Sugar-Free Carrot Cake recipe

This is a revised version of the first fat-free carrot cake I've made. I wanted to make a sugar free version, and substituted sugar for agar nectar, and adjusted the applesauce ratio so the cake would not be too moist. The cake over came out just as good as the one with sugar.


Ingredients
1 cup All purpose flour
1/2 Rolled Oats
2/3 cup Agave
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/8 tsp nutmeg
¼ tsp salt
3/4 cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup shredded carrot

Directions
Preheat oven to 350 F

Grease a 8x8 pan

Add the rolled oat into a food processor and blend until very fine, then add into a medium bowl along with the flour, baking powder, soda, salt & cinnamon in a medium bowl and mix. Then stir in the applesauce, agave, vanilla and shredded carrots.


Pour batter in the the 8x8 pan and bake for 15-20 minutes, until the cake is completely done.
