3 lbs of Russet Potatoes (peeled & cubed)
8 Cloves Garlic (Pelled)
2 cups Home Made Vegan Mayo (or mayo of your choice)
3 Tablespoons Garlic Salt (more if desired)
2 teaspoons Fresh Cracked Black Pepper
Add your peeled & cubed potatoes and your 8 cloves of peels garlic into a large pot and pour water in until covers the potatoes. Set your pot on the the stove and turn on to high & bring the water to boil. Boil the potatoes for about 15-20 minutes or until tender (check with a fork).
Drain your potatoes and garlic in a colander and add them to a large mixing bowl along with your vegan mayo (you might use more or less depending). Using a potato masher begin to mash your potatoes, garlic, and vegan mayo. When you have reached your desired texture, add in your garlic salt, and fresh cracked pepper.
I like serving garlic mashed potatoes with with my simple vegan gravy or sometimes when I feel fancy I'll whip up some vegan mushroom gravy from The PPK.
