vegan vanilla cupcake with zesty orange frosting!
1 cup Vegetable Shortening
1/2 cup Soy Milk (may need 1/8 cup more depending on climate)
1 teaspoon Vanilla Extract
16 oz Powdered Sugar
optional lemon zest, orange zest..etc
In a food processor add the shortening, soy milk, and vanilla extract. Pulse about 8-10 times until it becomes a fluffy light texture. Then add in all the powdered sugar and process until everything is mixed together and there are no lumps.
