TVP Meatball Recipe (gluten-free)


spaghetti and meatballs

1/2 cup hot water
1/2 tsp dried basil
1/4 tsp dried oregano
1/2 tsp onion powder
1/2 tsp garlic salt
1/8 tsp cumin
3/4 cup Textured Vegetable Protein (TVP)
1/2 cup day old cooked brown rice (note)*
1/4 tsp ground black pepper


In a mixing bowl add the water, dried basil, oregano, onion powder, garlic salt, and cumin. Allow the ingredient's aroma bloom for about 10 minutes. Add in the TVP to soak up all the flavor, let the TVP to sit for another 5 minutes. 

In a food processor, add the brown rice and pulse about 5 times or until fine grain like texture. and add in the soak TVP mixuture & black pepper, and pulse until desired meat like consistency. 

Allow the meatball mixture to rest in the refrigerator for 30 minutes before shaping.
Shape the meatball mixture into 1 inch balls or whatever size you like...

The meatballs can be baked, pan fried, or even added into sauce, and they don't fall apart either and great for entrees or appetizers.


* why use day old brown rice? 
Its important to use day old rice because it has less moisture than same day cooked brown rice. Brown rice in this recipe helps bind the tvp and give it some texture as well.
