4 tablepoons Canola Oil
6 tablespoons All Purpose Flour
2 cups Vegetable Broth
(i used 2 veggie boullions + 2 cups water)
11/2 cups Soy Milk
1/2 teaspoon Fresh ChoppedRosemary (optional, but it makes it huge difference)
In a small sauce pan add you oil and turn the heat to medium, it only takes a minute for the oil to have slight boil, then mix in your flour gradually, with a fork or whisk, and mix continuously for about 1 minutes, you just want to cook the flour but not let it turn golden or brown.
Then with the heat on whisk in your veggie broth and soy milk, you can see instantly that the roux will thicken the broth, soy milk, and fresh rosemary. Bring the gravy to a simmer and turn off the heat.
This gravy can be poured over mashed potatoes, used in pot pies, eaten with biscuits...etc : ]
