Vegan Moist Fudgy Brownie Recipe

1/2 cup Rolled Oats 

1/2 cup All Purpose Flour
3/4 cup Coco Powder
1/2 cup brown sugar
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup canola oil
1/2 cup soy milk 
1 1/2 teaspoon vanilla extract

Pre-heat oven at 350 F

In a food processor, add the rolled oats, and process for about 3 minutes until the oats reach a semi mealy consistency. Then add in the all purpose flour, coco powder, brown sugar, granulated sugar, baking powder, baking soda and salt, pulse about 6 times to incorporate everything.

Add the dry mixture into a large bowl, and mix in the oil, soy milk, and vanilla.

Mix until fully combined.

Then oil a baking pan about 9x9, and add brownie batter into it, smooth it out and place into the pre-heated oven.

Bake the brownies for 25-30 minutes.  

The brownies should look kind of like a sunken souffle, and seem a little crumbly. That's okay because you will let it cool on the counter for 15 minutes, then cover the brownies with a foil or plastic wrap, and allow the brownies to set in the refrigerator for about 2 hours.

After the 2 hours, the brownies will be super fudgy & moist!
