Oil-Free Vegan Chocolate Cake

what is more amazing and satisfying than oil-free chocolate cake....mmm 
I love love love chocolate, but sometimes I find chocolate cake over bearing with richness. This recipe is totally opposite of super rich vegan chocolate cake, its both light and satisfying. 

1 cup all purpose flour
1/3 cup coco powder
1/4 cup granulated sugar
1/4 cup brown sugar
1 1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup apple sauce or pear sauce
1/2 cup soy milk 
1/2 teaspoon vinegar
1 teaspoon vanilla extract


Pre-Heat Oven to 350 F

In a bowl add soy milk and vinegar, and let it set & curdle for about 5 minutes.

Meanwhile, in a large mixing bowl, sift in your flour, coco powder, both sugars, baking powder, baking soda and salt. Then add the apple puree, curdled soy milk, and vanilla. Mix until batter is smooth. Add the batter into a baking pan, and bake for about 30 minutes, until the toothpick comes out clean when you check.

Let the cake cool for 10-20 minutes and serve as pleased.
