Rum Cake with Dates

Date Cake

4 oz date puree
5 oz rice/soy milk
2 oz vegetable oil
4 oz granulated sugar
5 oz cake flour
1 teaspoon baking powder
¼ teaspoon baking soda
5 teaspoon matcha green tea powder
3 teaspoon cocoa powder


Preheat still oven at 350˚F

Mix wet ingredients together in a bowl
· Date puree, rice/soy milk, vegetable oil

Sift in dry ingredients into wet mixture & incorporate
· Sugar, cake flour, baking soda, baking powder

Grease a 10 inch cake round pan and place cake batter in it then bake until skewer comes out of the cake clean.

Rum Syrup

Ingredients 4 oz granulated sugar
4 oz water
2 oz rum


In a pot add granulated sugar and water, boil until sugar is dissolved, and in the rum.

Brush cake with rum sauce and serve with favorite vegan cream
