Chocolate Tart with Sea Salt Recipe

Whole Wheat Tart

1 1/4 cups whole wheat pastry flour
1/8 teaspoon salt
7 tablespoons very cold soy butter

Cold water (variable)

In a bowl add wheat pastry flour and salt, add cold soy butter and break it in with your hands until about pea size, then slowly add cold water tablespoon at a time until the dough is incorporated together but not sticky.

Roll out dough about ¼ inch thich and mold over 2 inch tart tin. Dock the dough, add pie weight and bake in still oven at 350˚ F, until the dough begins to separate from tin and its golden brown.

Soy Chocolate Ganache with sea salt

¼ cup soy milk
4 oz bitter sweet chocolate
~1/4-1/2 teaspoon sea salt

Simmer soy milk and pour over bitter sweet chocolate and salt, mix until all chocolate is melted.

Pour the sea salt ganache into the tart and let it set in the refrigerator for an hour, and to garnish crack a little more sea salt on top.

If you want to get fancy you can spin some sugar, add some chocolate sauce and fruit coulis on the plate..
