Chocolate Cashew Cream Recipe

This cashew cream frosting is hands down super easy. I was experimenting over the weekend...and came up with this recipe. Depending on your taste buds, you may or may not add or take out some chocolate, but I feel just right for me...hope you enjoy this chocolate cashew cream frosting recipe!


Ingredients
1 cup Raw Cashews
1/2 cup soy milk
1 teaspoon vanilla extract
1/4 cup powdered sugar
1 cup Semi Sweet Chocolate Chips
1 Tablespoon Coconut oil (for shine)

Directions
Soak the cashews in boiled hot water for an hour, drain the cashews and blend them in the food processor or blender until very fine (about 5 minutes). While blending, gradually add in the soy milk, blend until completely smooth (another 5-10 minutes). Lastly, add in the vanilla extract and powdered sugar & blend.

Melt the chocolate, by placing the chocolate in a bowl, and setting it over a pot of boiling water, with the heat turned off. Let the chocolate melt by itself (about 5-10 minutes), then mix in the coconut oil.

Fold in the cashew cream into the melted chocolate with a spatula.
