Healthy Banana Bread Recipe

Super easy, healthy, quick, and Oil Free banana bread recipe. 


Made some banana bread minis and a few with chocolate chips

Ingredients
3 Super Ripe Large Bananas

2 Tablespoons Fresh Lemon Juice or Vinegar
1 Cup Soy Milk
1 1/2 teaspoon Vanilla Extract
1/3 Cup Sugar (can be substituted with agave ..see note**)
2 Cups All Purpose Flour (or wheat)
3/4 teaspoon Baking Powder
3/4 teaspoon Baking Soda
1/2 teaspoon Salt
1/2 teaspoon Cinnamon 

Directions

Preheat oven to 350 F

First Mash the bananas and set aside.

Second curdle the soy milk by adding the lemon juice, let that set for about 5 minutes. 

Meanwhile sift the sugar, flour, baking powder, baking soda, salt and cinnamon into a bowl, add in the curdled soy milk and vanilla extract. Mix the batter until smooth. Then fold in the mashed bananas.

Scoop the banana bread batter into muffin tins or loaf pans. Bake for about 30 minutes until done.


**Note**
can be substituted with 1/3 cup agave instead of 1/3 cup sugar + use 1/3 cup soy milk instead of 1 cup.
