Apple Nut Muffin Recipe







ingredients

1 cups soy milk
1 tablespoons white vinegar
1 1/4 cups all purpose flour
1/4 cups granulated sugar
2 teaspoons baking powder
3/4 teaspoons baking soda
3/4 teaspoons salt
1/2 teaspoons ground cinnamon
2 tablespoons vegetable oil
1 teaspoon vanilla extract
2 flax eggs (2 tablespoons flax meal + 6 tablespoons hot water)
1 cup shredded Golden Delicious or Granny Smith apples
1/2 cups walnuts, chopped

Directions
Preheat oven to 400 F

First add the soy milk and vinegar into a mixing bowl and let it curdle for about 5 minutes


Mean while, in another bowl sift in flour, sugar, baking powder, baking soda, salt, and cinnamon. Set it aside.


Add the oil vanilla and flax eggs into the soy milk, mix very well and stir in the soy milk mixture into the dry ingredients bowl, mix until fully incorporated. Lastly, fold in the shredded apples and walnuts.


Scoop the batter into lined muffin tins and bake for about 20 minutes until done.
