Vegan Lemon Cookie Recipe

Super versatile vegan lemon cookie recipe. Add some poppy seeds to make them vegan lemon poppy seed cookies, cashew for vegan lemon cashew cookies, or even lemon lavender cookies...etc. The world is your limit with this lemon cookie recipe....: ]


2 1/2 cups All Purpose Flour 
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup unsweetened apple sauce
1/4 cup canola oil
3 Tablespoons fresh lemon juice
4 teaspoons lemon zest
1 teaspoon vanilla extract


Preheat Oven to 350 F

Sift the flour,baking powder, baking soda, and salt into a large bowl and set aside. In another bowl mix the apple sauce, oil, lemon juice and lemon zest together, and gradually add that to the dry sifted ingredients. Combined until fully incorporated, and let the cookie dough rest for about half and hour. 

Meanwhile, line a sheet pan or two with parchment paper and lightly with oil.

When the dough has rested shape or cut as desired, and put the cookie on to the sheet pans and bake for about 12 minutes. Let them cool for about 4 minutes before munching on them.



  1. thank you for this recipe. i didn't have apple sauce so i substituted with a 1/4 cup of coconut milk instead. extra flour for rolling. they are delicious!

  2. why do you have to let the dough sit for half an hour?

    1. when I was making the cookie dough, I found that when I mixed everything together, the dry ingredients did not seemed as it it was absorbing the wet ingredients.

      So thus I let it rest for about half an hour for the drys to soak up the wet ingredients, to make better pliable easy working dough, that should not break apart when scooping or cutting.
