Chinese Steamed Cupcake 'Fat Gou' (Prosperity Cake) Recipe

I remember as a kid on any Chinese occasion, celebration or event, there was always boxes and boxes of dim sum, filled with sweet and savories. But always, there was Chinese Steamed Cupcakes. I use to love eating those, because it was fun to pick at and eat each section of the cupcake top.

From my memories I went in search of the recipe. And what do you know? It turns out its a accidental vegan and gluten free cake. This super simple easy recipe is sure to please.

All you need is a steamer
one 6 cupcake tin

3 sticks of Chinese Brown Candy (1 cup brown sugar may be substituted)
2 cup water
16 oz rice flour
4 teaspoons baking powder
1 teaspoon oil

First turn on the stove to high to heat up the steamer.

Then boil the water and add the Chinese brown candy, simmer until the sugar is fully dissolved and let it cool completely. In a separate bowl add the rice flour and baking powder, slowly add in the sugar water, while mixing. Make sure there are no lumps, and lastly mix in the oil. 

Line your 6 cupcake tins, and ladle in the batter. Put it in the steamer and let it steam for about 30 minutes.
