Carrot and Coriander Soup

1 tbsp vegetable oil
1 medium Onion (chopped ~ 1.5 cups)
1 medium Potato (chopped ~ 1.5 cups)
1 lbs Carrots (chopped)
1/2 cup Celery (chopped)
4 cups Vegetable Stock
1 tsp ground coriander
handful of fresh coriander

add salt and pepper to taste


Heat oil in a large pot, add the onions and saute until tender. Then add in potatoes, carrots, celery, and the coriander, saute for about 2 minutes to bring out the aromas, then add in the vegetable stock. Bring everything to a boil and let it simmer for about 20 minutes until all the vegetables are tender. 

Add the soup mixture into a blender or food processor, along with the fresh coriander and blend until smooth or desired consistency. Add salt and pepper to taste.
