Vegan Pumpkin Oat Bread Recipe


11/2 Cups All Purpose Flour
3/4 Cup Sorghum Flour (or Whole Wheat Flour)
1/4 Cup Corn Starch
1 tsp Baking Soda
3/4 tsp Salt
2 tsp Cinnamon
1/2 tsp Nutmeg
1/2 tsp Ginger 

***1/2 Cup Oats*** (fold into the batter in the end)

2 Tablespoon Flax Meal + 6 Tablespoons Warm Water
1/3 Cup Soy Milk (or any non dairy milk)
1/2 Cup Oil
2 tsp Vanilla Extract
1/3 Cup Brown Sugar
1/3 Cup Granulated Sugar
1 Cup Pumpkin Puree (i used canned)

Preheat oven to 350 F

mix all the dry ingredients EXCEPT the oats and set it aside. Then mix  the wet ingredients together in order given with a whisk, and fold in the dry ingredients using a spatula until fully incorporated, lastly fold in the oats into the batter. Oil a 9x5 pan add the batter, bake for about 30 minutes until done.
