Vegan Horchata Recipe

1 cup uncooked long grain rice
5 cups water
1/2 cup Almond Milk (or soy milk)
1/2 Tablespoon Vanilla Extract
1/2 Tablespoon ground cinnamon
2/3 cup sugar

in a blender add the rice and water, blend on high until the rice is grounded. Let the rice and water sit over night (if you are in a hurry 3 hrs is okay). Then strain the rice keeping the liquid, add the almond milk, vanilla, cinnamon and sugar. Served chilled or warm and enjoy : ]
