4 cups left over mashed potatoes
1 cups braised string beans (chopped)
1/2 teaspoon pepper
3 tablespoon sriracha (optional)
cornstarch to coat croquettes
oil to fry
in a bowl add the left over mashed potatoes, string beans, pepper & sriracha and mix until it is fully incorporated. using a tablespoon, scoop and shape the potato into a ball and coat with cornstarch, then fry in oil until golden brown.
