Easy Raw Caramel Recipe

1/2 cup Raw Pine nuts or Cashews
1/2 cup Medjool Date
1 tsp Vanilla Extract

In a blender or food processor add pine nuts, blend on high until it becomes powder (about 5 minutes), add in the dates & vanilla extract and blend until smooth. (about another 5 minutes), there might be some little chunks but thats fine.

put the caramel mixture on a parchment paper, and flatten it out into a large square 1/2 inch think or desrired thickness Let the caramel mixture rest in the refrigerate for about 2 hours.

After the caramel mixture is rested, take it out and cut into bit size pieces : ]
