Fat-Free Vegan Carrot Cake Recipe

I came across this recipe from the Happy Herbivore and decided to make it, the carrot cake came out great! Really moist and flavorful and healthy too. I just adjusted a few of the ingredients

Ingredients

1 cup All purpose flour
1/2 Rolled Oats
1 cup raw sugar
1 tsp baking powder
1 tsp baking soda
1¼ tsp cinnamon
1/4 tsp nutmeg**
¼ tsp salt
1½ cup unsweetened applesauce
1 tsp vanilla extract
1/2 cup shredded carrot

Directions
Preheat oven to 350 F

Grease a 8x8 pan

Add the rolled oat into a food processor and blend until very fine, then add into a medium bowl along with the flour, baking powder, soda, sugar, salt, cinnamon and nutmeg in a medium bowl and mix. Then stir in the applesauce, vanilla and shredded carrots.

Pour batter in the the 8x8 pan and bake for 15-20 minutes, until the cake is completely done.
