Shitake Tomato Miso Soup

4 cups water
2 Roma Tomatoes
2 Shitake Mushrooms (re-hydrated dry or fresh)
4 Tablespoons Shiro Miso Paste

first cut the tomatoes into wedges and cut the mushroom into thin slices.
add water into pot along with the tomatoes & mushrooms, bring it to a boil and let it simmer for about 10 minutes to soften the tomatoes and mushrooms. Turn off the heat.

in a separate bowl add a ladle of the boiled soup and stir in the miso paste. mix quickly until it is fully dissolved, then add the miso water back into the pot & serve.
