Vegan Coconut Macaroons

1 cup non dairy milk
1/2 cup sugar
1/4 tsp salt
3 Tbsp All Purpose Flour
1 tsp vanilla extract
2 cups unsweetened shredded coconut

preheat oven @ 350 F.

Boil the milk in a pot, then add sugar & salt, mix to dissolve. Whisk in the flour and simmer the liquid until it thickens, this will take ~ 5 minutes, then whisk in vanilla and fold in coconut.

use a tablespoon (or desired size) to scoop macaroon mixture onto a sheet pan lined with parchment.

Bake for ~ 15 minutes or until golden
