Simple plain vegan biscotti recipe, add some fruit or nuts to fit your cravings...I love to add cashew & dates, orange zest & chocolate...or even chocolate dipped!
2 Tbs Ground Flax + 6 Tbs water (or non-dairy milk)
1/4 cup oil
3/4 cup sugar
1/4 tsp salt
1 tsp baking powder
2 tsp vanilla extract
1/2 tsp almond extract (optional)
1 3/4 cup All Purpose Flour (can be substituted with GF flour)
preheat oven @ 350 F
in a large bowl add the ground flax and water and whisk until it becomes a thick mixture. Then whisk in oil, sugar, salt, baking powder, vanilla extract and almond extract. Sift all purpose flour and slowly add into the wet mixture. divide dough in two, and form 2 logs approx 12x2 inch on a sheet pan lined with parchment paper.
Bake the 2 logs for about 30 minutes or until slight brown. Take the logs out and let it cool for 15 minutes.
Reduce oven to 275 F
with a chefs knife cut the logs into 1/2 in-3/4 in thick slices. Lay the slice back onto the sheet pan lined with parchment paper and bake for another 10 minutes or until dry.
